Sometimes, just enough is everything.

In Italian kitchens quanto basta means as much as needed. A reminder that the best recipes are guided by instinct, not strict measurements.

QB* was born in Bow, East London continuing the story that began with Pizza Brixton. When we took over in April 2025, we moved gently. The place already had a life of its own and we wanted to honour that.

​

But as time passed, it became clear to us that the space and the menu needed to grow closer to who we are. So in January 2026 we closed the doors and began again. What started as a small refresh slowly became a full renovation and a quiet rediscovery of what QB* could be.

​

Pizza is still at our heart. But the kitchen is freer now, guided less by rules and more by curiosity, season and mood. Because sometimes the best things happen when you stop measuring too precisely but just enough.
